Prepare the Trukai Medium Grain Rice
- Heat saucepan and add 1½ teaspoons of butter.
- Add chopped onion, carrot and peas & fry for 2 minutes.
- Add the rice to saucepan and fry for a further 2 minutes.
- Add 150mls of water and bring to boil.
- Add salt to taste.
- Once cooked, remove rice from heat and put aside to cool.
Prepare the omelette
- Beat 4 eggs and in 2 portions, fry until golden brown to make 2 omelettes.
- Set each omelette aside on individual plates, and fill the centre of the omelette with a line of rice.
- Add chopped tomato and any other ingredient of choice, then wrap and serve hot.
