One Pot Spiced Chicken & Rice

One pot spiced Chicken and Medium Trukai Rice

(Serves 5)

Spiced Chicken thighs

  • 8pcs Chicken thighs
  • 5g Turmeric powder
  • 5g Paprika
  • 1g Chilli flakes
  •  Salt (pinch)
  • 2g pepper cracked

Medium rice

  • 300g Medium rice (washed and drained) 
  • 950g Water 
  • 4g Salt (pinch) 
  • 1 Onion diced (chopped)
  • 4pcs Garlic (diced)
  • 4g Ginger (diced)
  • 2pcs Carrot (chopped)
  • 2pcs Bay leaf

 To cook the spiced chicken rice:

  1. Marinate the chicken thighs in the chilli flakes, turmeric, salt, pepper and paprika powder.
  2. Pour some oil in a heavy based pot. Once hot begin to sear off chicken achieving a golden brown color. Once achieved place the chicken on the side.

To cook the rice:

  1. Without cleaning the pot, add oil to the pot and begin to cook off the carrots, onion, garlic, carrot and celery and bay leaf.
  2. Add rice and begin to sauté off.
  3. Add chicken to the mix
  4. Add water, place baking paper over and lid and begin to cook
  5. Bring to boil and simmer till rice is cooked.
