Chicken Congee (Asian Rice Porridge)

Chicken Congee (Asian Rice Porridge)

Ingredients

  • 1 cup medium-grain rice
  • 8 cups chicken stock
  • 2 chicken breasts
  • 1 piece of ginger, sliced
  • 2 cloves garlic, smashed
  • Salt to taste

Toppings:

  • Soy sauce
  • Chopped spring onions
  • Sesame oil

Method

  1. Rinse the rice:
    • Wash the rice until the water runs clear.
  2. Cook the congee:
    • In a large pot, combine rice, water/stock, chicken, ginger, and garlic.
    • Bring to a boil, then reduce to a simmer.
    • Simmer uncovered for 1 to 1.5 hours, stirring occasionally to prevent sticking.
    • The rice should break down and become creamy. Add more water if needed.
  3. Slice the chicken:
    • Once the chicken is cooked through, remove it, shred it, slice and set aside.
  4. Serve:
    • Ladle into bowls and top with your garnishes.
