Chicken Congee (Asian Rice Porridge)
Ingredients
- 1 cup medium-grain rice
- 8 cups chicken stock
- 2 chicken breasts
- 1 piece of ginger, sliced
- 2 cloves garlic, smashed
- Salt to taste
Toppings:
- Soy sauce
- Chopped spring onions
- Sesame oil
Method
- Rinse the rice:
- Wash the rice until the water runs clear.
- Cook the congee:
- In a large pot, combine rice, water/stock, chicken, ginger, and garlic.
- Bring to a boil, then reduce to a simmer.
- Simmer uncovered for 1 to 1.5 hours, stirring occasionally to prevent sticking.
- The rice should break down and become creamy. Add more water if needed.
- Slice the chicken:
- Once the chicken is cooked through, remove it, shred it, slice and set aside.
- Serve:
- Ladle into bowls and top with your garnishes.
