Mexican Beef with Trukai Jasmine Rice

For the Mexican Beef Mince

Ingredients:

  • 3 tblsp olive oil
  • 1large onion chopped
  • 1 knob ginger chopped
  • 2 cloves garlic chopped
  • 500g mince beef
  • 1 red pepper diced
  • 1 yellow pepper diced
  • 3 tblsp tomato paste
  • 3 tblsp taco seasoning
  • salt & pepper to taste
  • 3 large Tomatoes (diced)
  • 2 cups borlotti beans(can substitute with black beans)
  • 2 cups sweet corn 
  • 3 tblsp coriander fresh, chopped

Optional Toppings:

Shredded cheese, lime wedges, sour cream, chopped tomatoes, coriander, avocado dip, tortilla chips, chilli.

For the Trukai Jasmine rice:

Ingredients:

  • Rice 2 cup-(washed) (225g if using scales)
  • Water 3 cup-(room temp) (685g if using scales)
  • Salt pinch (1g if using scales)

Optional

  • Olive oil (drizzle at the start)
  • Lemon juice. (Finish with few drops of lemon juice)

Method:

To cook the rice:

  1. Start by washing rice grains. Good indication is when the water turns clear.
  2. Place the rice,  water and salt in pot. Optional to add olive oil at this stage.
  3. Bring to boil. Once boiled turn heat down to a simmer and remove lid slightly off the pan allowing rice to simmer for approx 20-25min. Taste to see if its cooked.
  4. Once cooked allow to steam for 5 min.
  5. Mix the rice with a fork and serve.

To cook the Mexican beef:

  1. Heat the oil in a large pan over medium-high heat. Add the onion, ginger and onion and cook for 2 minutes.
  2. Add the mince beef and sauté off until brown.
  3. Add the salt, pepper, taco seasoning. Cook for 1 minute.
  4. Add the tomato paste and cook for 1 min.
  5. Add the coriander, tomatoes, borlotti beans, corn and red and yellow capsicum. Cook for a further 2 min.
  6. Double check seasoning.   
  7. Set aside and serve with Trukai Jasmine rice
