Instructions to Cook:
1. Sauté aromatics:
In a large pan or paella pan, heat oil over medium heat. Add onion and garlic, sauté until soft.
2. Add peppers & spices:
Add bell peppers and cook for 2–3 minutes. Stir in paprika, turmeric (if using), salt, and pepper.
3. Add rice:
Stir in Trukai Medium Grain Rice and mix well to coat with spices and oil.
4. Pour in stock:
Add the stock and bring to a boil. Reduce heat to low, cover, and let simmer for 10 minutes.
5. Add seafood:
Gently place prawns, squid, and mussels on top of the rice. Cover again and cook for another
10–15 minutes, or until rice is cooked and seafood is done.
6. Rest & garnish:
Turn off the heat and let the paella sit for 5 minutes. Garnish with fresh coriander and lemon
wedges.
