Ingredients
1/2 cups medium grain rice
1/4 cup almonds, chopped
1 1/4 tsp ground cinnamon
2 cups evaporated milk, chilled
1 cup ice cubes
2 tsp vanilla extract
1/4 cup instant coffee
1/2 cup sugar
3/4 cup boiling water
Method
1. Cook rice with almonds and 1 tsp cinnamon. Let cool completely; refrigerate overnight.
2. In blender, purée rice, evaporated milk, ice and vanilla until smooth. Strain and divide among glasses.
3. Meanwhile, in large mixing bowl, combine instant coffee and sugar. Pour boiling water over top; using electric mixer, beat for 3 to 5 minutes or until thick, foamy and stiff peaks start to form.
4. Top each serving with coffee foam; sprinkle with remaining cinnamon.
